Cattle Drive Casserole

Ingredients:

2lb hamburger meat
1 half green bellpepper
1 Whole Vidalia Onion
1 Can Rotel or tomatoes with green chilis
1 Can Whole Corn
2 Packs Of Bisquick Cheese & Garlic Mix
Mayonaise
Sour Cream

Ranch
Shredded Cheddar Cheese

Directions:

1. Brown hamburger meat. Add Onion, green bellpepper. When almost done add Taco Seasoning.
2. While hamburger meat is browning mix up bisquick mix and place in bottom of casserole dish and bake for 5 to 7 minutes at 350.
3. Mix 1/2 cup mayo, 1/2 cup sour cream, 1/2 ranch and one cup shredded cheese.
4. Take casserole dish out of oven. Add hamburger mixture, can of rotel and corn to top of biscuit mix. Top with Mayo mixture. Cover dish with more shredded cheese and place in oven for 45 minutes on 350 or until done.

Simple Pea And Tomatoe Bacon Soup

Ingredients

  4 slice smoked bacon
    1 can petite diced tomatoes

    2 tbsp. Dijon mustard

    Kosher salt

    pepper

    1½ c. green split peas

    4 clove garlic

    2 medium carrots

    2 stalk celery

    1 large onion

    6 sprig fresh thyme

    croutons

    Crisp bacon

    Chopped parsley

Directions
Step One: Fry the bacon slices on high for 3 minutes. Do not cook all the way thorough. You may also microwave or bake the bacon for a healthier alternative.

Step Two: Meanwhile, in a 5- to 6-quart slow cooker, combine the tomatoes (including their juices), mustard, 5 cups water, and 1/2 teaspoon each salt and pepper.
Step Three: Add the partially cooked bacon along with the split peas, garlic, carrots, celery, onion, and thyme and stir to combine. Cook, covered, until the vegetables are tender and the peas have broken down, 7 to 8 hours on low or 4 to 5 hours on high.
Step Four: Remove and discard the bacon slices and thyme. Divide among bowls and top with croutons, bacon, and parsley, if desired.

The only thing I love about winter is the fact that I can warm myself up with a nice bowl of soup. Since it Winter, I decided to do a special post with some of my favorite soups. So here it goes..

         Simple Chicken Gnocchi Soup

Ingredients

1⁄2 onion, diced

1 stalk celery, diced

1 clove garlic

1⁄2 carrot, shredded

1 tbsp olive oil

3 to 4 chicken breast, cooked and diced

4 cup chicken stock

1 salt & black to taste

1 tsp thyme

16 oz potato gnocchi

2 cup half-and-half

1 cup fresh spinach, chopped

Directions:
1. Saute onion, celery, garlic, and carrot in olive oil over medium heat.

2. Put in chicken breast, chicken stock, salt, pepper, and thyme. Once it begins to boil, add gnocchi. Then boil for 4 minutes, then simmer for 10 minutes on low heat.

3. Put in half-and-half and spinach,  cook for another 1-2 minutes until the spinach shrinks.

                     Simple Taco Soup



Ingredients:

1 lb ground beef

1 large onion, chopped

1 oz package Hidden Valley ranch dressing, mix

1 oz package taco seasoning mix

16 oz can pinto beans

16 oz can chili beans

16 oz can whole kernel corn

8 oz can diced tomatoes

Directions:

1. Brown meat and onions..When done drain.

2. Mix ranch dressing and taco seasoning into meat.

3. Add all of the other ingredients without draining them.

4. Cook for 1 hour.

Simple Baked Potato Soup

Ingredients:

2 medium potatoes (about 2 c. chopped)

3 tbsp. butter

1 c. diced white onion

3 tbsp. flour

4 c. chicken stock

2 c. water

1 tsp. salt & pepper

11/2 tsp. basil & thyme

Garnish

1/2 c. shredded cheddar cheese

1/4 c. crumbled bacon

1 chopped green onion (optional)

Directions:

1. Cut and peel potatoes and place them in pan on low as if you are making mashed potatoes.

2. As the potatoes cook , prepare soup by melting butter in a saucepan, and saute onion until light brown. Add flour to the onions to make it thick . Transfer to a large pot.

3. Add stock, water, spices to the pot and bring to a boil. Reduce heat and simmer for five minutes.

4. Place potatoes in pot with ingredients in step one. Cook until soup begins to boil. Reduce heat and simmer the soup for another 15 minutes or until it has thickened.

5. Garnish each bowl of soup with about a tbsp. of shredded cheddar cheese, a half tsp. of crumbled bacon and a tsp. or so of chopped green onion (if desired).

Simple Chicken Enchilada Soup

Ingredients:

1 tbsp vegetable oil

1 lb boneless, skinless chicken breast, approximately 3 fillets

1⁄2 cup onion, diced

1 clove garlic, pressed, to taste

4 cup chicken broth

1 cup masa harina

3 cup water

1 cup enchilada sauce

16 oz Velveeta cheese

1 tsp salt, to taste

1 tsp chili powder

1⁄2 tsp cumin

2 medium tomatoes, diced

1⁄2 cup Spanish onion, diced

2 tsp fresh jalapeno pepper, chopped, seeded, and de-ribbed

2 tsp fresh cilantro, finely minced

1 pinch salt

1 cheddar cheese, shredded, for garnish

1 corn tortilla chips, crumbled, for garnish

Directions:

  1. Add 1 tablespoon of oil to a large pot over medium heat. Add chicken breasts and brown for 4-5 minutes per side. Set chicken aside.
  2. Add 1/2 cup onion and garlic to pot and sauté over medium heat for about 2 minutes then add chicken broth.
  3. Combine masa harina with 2 cups of water in a medium bowl and mix until blended.
  4. Add masa mixture to  onions, garlic, and broth. Then add remaining water, enchilada sauce, cheese, and spices to pot and bring mixture to a boil.
  5. Shred the chicken into small, bite-size pieces and add it to the pot. Reduce heat and simmer soup for 30-40 minutes letting it thicken.

Pico de Gallo:

Add tomatoes, Spanish onion, jalapeno peppers, cilantro, and pinch of salt to a bowl. Mix to combine.

Garnish each serving of soup with shredded cheddar cheese, crumbled corn tortilla chips, and pico de gallo.

Simple Broccoli Cheese Soup

Ingredients:

1⁄2 cup butter

1 onion, chopped

16 oz package chopped frozen broccoli

14 1⁄2 oz cans chicken broth

1 lb loaf processed cheese food, cubed

2 cup milk

1 tbsp garlic powder

2⁄3 cup corn starch

1 cup water

Directions:

  1. In a pot, melt butter over medium heat and cook onion in butter until soft. Then stir in broccoli, cover with chicken broth and simmer until broccoli is tender, approximately 10 to 15 minutes.
  2. Reduce heat, stir in cheese cubes until melted, and mix in milk and garlic powder.
  3. Mix stir cornstarch into water until dissolved in a small bowl and then stir into soup. Then  continue to stir until thick.

Simple Chili

Ingredients

1 1/2 pounds ground beef

1 onion, chopped

(16-ounce) cans red kidney beans, rinsed and drained

2 (14-1/2-ounce) cans diced tomatoes

2 to 3 tablespoons chili powder

1 teaspoon salt & pepper

1 teaspoon ground cumin

 

Directions:

1. Cook ground beef and onion in a large skillet over medium-high heat, stirring until beef crumbles and is no longer pink; drain.

2. Place mixture in 5-quart slow cooker; stir in beans and remaining ingredients

3. Cook at HIGH 3 to 4 hours or at LOW 5 to 6 hours.

Simple Chicken Noodle Soup

Ingredients:

1 Tablespoon butter

1/2 cup chopped onion

4 can chicken broth

1 can vegetable broth

1/2 pound chopped cooked chicken breast

1 1/2 cup egg noodles

1 cup sliced carrots

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

Salt & pepper to taste

Directions:

  1. In a skillet brown chicken breast until it is no longer pink. Then chop it.
  2. In a small pot melt butter over medium heat. Add onion and cook until tender about 5 minutes.
  3. Pour in chicken and vegetable broths, chicken, noodles, carrots, basil, oregano, and salt and pepper.
  4. Bring to a boil, then reduce heat and let simmer for 20 minutes before serving.

Simple Tator Tot Casserole- Recipe Mania #8

Ingredients:
1lb. Hamburger meat

Diced Onion

Can Of Whole Corn

Can Of Green Beans

Can of Mushroom Soup

Shredded Cheddar Cheese
Directions:

1) Brown 1lb Hamburger meat and diced onion.
2) Place hamburger meat in bottom of casserole dish, put in corn, green beans, can of Mushroom soup and shredded cheese.
3) Even out ingredients in caserole dish and then top with tator tots. Place tator tots side by side with no gaps between and cover entire dish.

4) Top tator tots with shredded cheese and bake in oven on 350 until tator tots start to brown.

Optional: After you complete step one you can place everything in your crockpot and cook that way if you would like.

Simple Crockpot Spicy Cheese Dip

 

Simple Crockpot Spicy Cheese Dip

Ingredients:

Velveeta Cheese

1 Can Rotel (Mild or hot)

1 Can Cream of Mushroom Soup

1 Jar Sliced Jalapenos

1 Cup Whole Milk

1lb. Ground Beef

1lb. Ground Sausage

*You may just use sausage or just use ground beef, split it half in half or substitute for Ground turkey or pork if desired.

Directions:

  1. Brown half a package of ground beef & Half a package of Sausage. You can also do just 1 pack sausage or 1 pack ground beef (Or substitute such as ground turkey or pork).
  2. Cut cheese into cubes, slice up Jalapenos and open Cream of mush room soup and Rotel.
  3. Place browned meat. Cheese, Rotel, Jalapenos, cream of mushroom soup, and one cup of Milk in crockpot.
  4. Cook on High or low depending on how long you need it to cook. Low if you plan to leave it for a bit. High if you want it done fast.
  5. Enjoy!
